Potato cakes, but with bacon added they originated in Gateshead!

10oz potatoes, peeled
1 large onion, finely chopped
2oz SR flour
2 eggs
Oil for frying, S&P

Grate potatoes onto a tea towel and squeeze liquid out.
Put chopped onion into a bowl and add potatoes, seasoning and flour.(At this stage add 6oz of finely chopped bacon or some grated cheese if desired)
Beat the eggs into the mixture

Heat the oil in the frying pan to a medium heat. Put ample tblsp of mixture into the frying pan and flatten. Cook on each side until golden brown on each side. (About 4 mins a side)

Serve immediately.( Makes about 10)
